Mmm, banana poppyseed muffins!

No pancakes this weekend..just yummy and healthy  banana poppyseed muffins with my favorite smoothie. Happy weekend!

Banana Poppyseed Muffins 


1 egg
1/2 c. sugar
1/4 c. oil
1/2 c. milk
3 tbsp. poppy seeds
2 bananas, mashed
1-1/2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. soda

In large bowl, mix egg, sugar and oil. Add milk, poppy seeds and banana and mix. Stir dry ingredients together in a small bowl. Add flour mixture to the liquid mixture all at one time. Stir with spoon until dry ingredients are moist. Pour into greased muffin pans until half full. Bake at 400 degrees for 20 minutes. Makes 12 muffins.
