Smores Cake Recipe


Celebrate September with this yummy cake inspired by a favorite, feel good campfire treat-S'mores! It's a quick tasty treat to whip up when you're craving a familiar, childhood treat.

S'mores Cake

Cake:

Ingredients:
  • 1 cup graham crackers, finely ground
  • 1/4 cup all purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp salt
  • 3/4 stick unsalted butter, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • 1/4 cup milk
  • 1/2 cup semi sweet chocolate chips
Frosting:

2 cups mini marshmallows (melted)

Directions:

1. Preheat oven to 350F. Grease the 8 -inch square baking pan and dust it with flour, knocking out any extra. Combine the graham cracker crumbs, flour, baking powder, and salt in a bowl.

2. Cream butter and sugar. Add egg, egg yolk and vanilla. Beat until smooth.

3. Alternately add flour mixture and milk mixture to butter mixture. Stir in chocolate chips.
4. Scrape batter into the prepared pan. Bake until done or until toothpick inserted in the center comes out clean.

Frosting: Melt mini marshmallows in a ceramic, microwaveable bowl for 5-10 seconds. Spread onto cake.

Captivating Cinemagraphs

A cinemagraph is a clever cross breed between a photograph and video. It's not really video but arguably more mesmerizing than plain photograph.  Visual graphics artist Kevin Burg and  photographer Jamie Beck are at the forefront of this captivating art. On recycling bottles and splashing in life's big pond


I was inspired by Sweet Paul's Crafty Friday tutorial to recycle this soy milk  into a sweet and simple vase that's great for casual table decorating.  You can make your own embellished glass vases by using washi tapes in seasonal motifs and colors. (Mental note to self: buy more washi tapes this year)

I've updated Basho's Pond (my photo blog) recently. Stay awhile to quiet your mind, splash in the pond, throw in some pebbles, create ripples and make waves. :)

Cranberry Scones and Mulled Spice Tea on a Rainy, Rainy Day




Cure for rainy day blues? Sing like a kettle and have yummy scone and tea! 

It has been raining non-stop for days. I'm really looking forward to some happy patch of sunshine soon. Despite the gloomy weather things are warm and cozy in the kitchen. I made a batch of this yummy scone and it's so wonderful with spiced mulled tea. The flavors just evoke a very cozy feeling of Christmas!

Cranberry Scone Recipe

Ingredients:

  • 2 cups flour
  • 1/3 cup white sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup butter
  • 1/2 cup cranberries (dried or fresh)
  • 2/3 cup milk

1.In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender.  Blend until flour mixture look like coarse crumbs. Stir in the cranberries.  Add the milk and stir until just combined. 

2.  Transfer to a lightly floured surface and  knead the dough four or five times and then pat, or roll, the dough into a circle that is 7 inches (18 cm) round and about 1 1/2 inches (3.75 cm) thick. Cut this circle into 8 triangular sections. 

3. Transfer to the prepared sheet and brush the top of the scones with milk.   Sprinkle with sliced almonds.   

Bake for about 15 - 20 minutes or until lightly browned and a toothpick inserted into the center of a scone comes out clean. Serve  with your favorite jam.
Makes 8 scones.

Stamp Up at Rose and Lotus



Howdy do? Sorry for the long pause. I've been busy cooking up a new craft enterprise. This month I'll be opening Rose and Lotus on ETSY, a shop that will be devoted to nothing but 100% hand carved craft rubber stamps. I love collecting rubber stamps but on ETSY, it seems I can't find the designs that I really like. So I'm making my own!

There will be kawaii, zakka style and personalized custom made rubber stamps for kitchen, stationery, holiday, packaging, office and school use at wonderful, reasonable prices. Hope you bookmark the shop when it opens. See you!
