Recipe: Healthy Strawberry Meringue Pie



Aside from being Valentine's month, February is also heart awareness month. Daily exercise, cultivation of positive emotions, and a healthy diet are just some of the things you can do to keep your ticker in tip-top shape. Enjoying  healthy desserts like this healthified version of strawberry meringue pie can also make life happy, healthy and delicious!




Strawberry Meringue Pie Recipe

Ingredients:

  • 3 egg whites
  • 1/4 tsp baking powder
  • 1/4 tsp. salt
  • 1/4 tsp cream of tartar
  • 1 cup sugar
  • 3/4 cup quick-cooking oats
  • 1/2 cup chopped walnuts
  • 1/2 tsp vanilla
  • 1 (10 oz) package frozen strawberries, thawed
  • 1 Tbsp cornstarch
  • 1 cup light whipped topping

Beat egg whites, baking powder, salt, and cream of tartar until stiff. Slowly beat in sugar until stiff but not dry. Combine oats and walnuts in a separate bowl, then blend into egg white mixture. Fold in vanilla. Spoon merimgue into a 9-inch pie pan, spreading meringue up the sides to form a crust. Bake at 325 F for 25 minutes or until lightly browne; cool.

To make a filling, drain strawberries over a saucepan to collect juice. Blend cornstarch into juice and cook over medium heat until thickened. Cool slightly and stir in strawberries. Spoon into cooled meringue crust. Cover loosely and chill for several hours. Serve with a dollop of whipped cream.

Yield: 8 servings.

You can find a free pattern of Beauregard the Valentine Bear on Sew Mama Sew's February 2012 True Love sew-along. The pattern comes in three sizes. I made mine in medium as it's the perfect size for hugging while watching tv, playing games on the computer or taking a nap.

Hello there! Sorry things have been pretty quiet here on Sweet Tidings. I'm currently sorting and unloading tons of stuff that I need to blog on my new-ish personal tumblr blog  Honey and Sage. It's personal as the topics (like shrinking your amygdala) may or many not pique your interest. Well, I do hope they do.

February WIP Armageddon




Oh my goodness! Can't believe we're halfway through February. How's your crafty life going so far?

I came across BirchBee's blog a few days ago and I  chanced upon the 2012 WIPpocalype sew-along/craft meme hosted by Measi's Musings. If the Mayan's predictions are to be believed the world will go kaput this year. It doesn't really bother me if it does (since we are all going to collectively die anyways)  but I wish it doesn't happen because there are so many DIY projects I still want to do. So before December 21, 2012, I want to complete my monthly WIP Armageddon to-do projects.

Black Forest



I wonder if you have tried the Black Forest Frozen Dessert recipe I included in my valentine newsletter? If you haven't  yet, well this is how it looks. I used the brown sugar brownie recipe for the cake base. White sugar is white death and I try to avoid it every chance I get. The result is a mildly sweet cake spiked with the flavors or rum and cherries. 

No need to use a fancy silicon heart shaped cake mold or anything to make this cake. A  regular springform mini cake pan would work pretty well.

Mini Seashore Sand Garden DIY




I miss the beach and I feel terminally bored. So this is the end result- an accidental  mini seashore sand garden DIY that I can rake (wait, I'm still looking for a miniature wooden rake), shovel (I borrowed one from the miniature plastic 7 dwarfs set), write inspirational words, practice sanskrit writing or doodle on. It can practically replace my kawaii sticky notes.  As for you, since it's still Valentine's you can probably make this sand garden for your sweetheart and write cheesy, romantic symbols and messages on it.


Mini Seashore Sand Garden DIY

  • Flat ceramic square dish
  • White sand
  • Pebbles
  • Kitschy miniature plastic coconut tree 
  • Message in a bottle (which you can fill with an S.O.S message or emergency $100 bill)


Directions:

1. Assemble the materials per your style or preference.
2. Play and enjoy your sand garden.

Tea and Tumblr



Whoopee, I'm now on Tumblr!  You know, I couldn't resist not starting a personal blog as I needed a platform to explore other themes, stuff and interests outside craft and DIY. To tell you the truth as much as I passionately love DIY I find myself getting bored and jaded at times. There are so many things I want to blog about that can't seem to fit in a traditional arts and crafts blog format. It can be so confining and constricting sometimes. Anyway, I love Tumblr. I think it's such a great match to my blogging style and preference for express lane, super condensed blog posts. Hopefully you will find my new personal blog Honey and Sage a radical departure to my usual DIY blogging style.

No worries, this blog will continue to be cultivated and updated daily. Thank you for reading especially to those kind folks who leave comments.

DIY: Cherry Pie Pincushion Tutorial



Hello Mon Cherie Pies! Here's a sweet little Valentine's day craft to make for yourself or for your DIY inclined friends. Happy crafting!


Cherry Pie Pincushion DIY Tutorial

Materials:

  • Fluted brioche tin
  • White felt
  • Red felt
  • Needle and thread/Sewing machine
  • Glue gun and glue stick
  • Polyfill


Directions:


1. Measure the diameter of your brioche tin. Using a protractor, draw a circle on a  piece of cardboard that approximates the bottom size of the brioche tin. Use this pattern to cut out 2 pieces of white felt. Make a heart-shaped cut-out in the middle of one white felt. Machine stitch a patch of red felt underneath it. Add a layer of  round white felt underneath it.

2. Wrap a ball of polyfill using the white felt. Secure the edges by sewing a running stitch around it. Pull the thread and tighten.

3. Using a glue gun, apply a generous amount of glue on the bottom rim and surface of the brioche tin pan. Glue the "felt cherry pie" into place.

4. To make long  stemmed cherry push pins, make little round shaped pieces of red felt and sew them around a piece of sturdy push pin (preferably a push pin with a handle point). Insert natural twine for cherry stems.

DIY Valentine's Day Monster Kit from Ellinée

DIY: Rose and Blossom Upcycled Doily Vase Tutorial




I love the beauty of second chances! This Stabucks frap bottle almost ended up in the recycling bin if not for the piece of cake doily ribbon I found protruding between the pages of a book. I love putting things together. Empty milk bottle meets sweet paper cakery.  And how about a fading red rose to sweeten it up? It's amore.


DIY Rose and Blossom Upcycled Doily Vase

  • Empty milk bottle
  • Cake doily roll strip
  • Natural twine
  • Wooden button (optional)
  • Adhesive tape

1. Wash and clean and dry bottle.
2. Fasten a piece of cake doily ribbon around the bottle. Secure with adhesive tape.
3. Wind natural twine around the bottle and fasten with wooden button (this step is optional).
4. Fill vase halfway with water and display a budding or a fading rose. Enjoy!

I love these pretty, spring time inspired zakka projects from MaMan. They're so sweet and colorful. My heart just flutters at the sight of those woodland cookie cutter paper cut-outs cleverly improvised into tiny note holders. And those embellished linen slippers--so Mori Girl inspired. Oy, those oil cloth bows are beyond cute too. I think my niece would love  them!

Recipe: Date and cinnamon spiced coffee cake



This is one of my favorite coffee and tea time cakes. It's irresistibly crumbly and big on flavor!


Date and Cinnamon Spiced Coffee Cake

Ingredients:

  • 1 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pitted dates, finely chopped
  • 4 eggs
  • 1 cup sugar
  • 1 cup butter, melted and cooled

Topping:

  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 cup chopped walnuts

Directions:

1. Preheat oven to 300 F.

2. Line a round or a spring form pan with parchment. Set aside.

3. Sift flour, baking powder, cinnamon, nutmeg and salt in a bowl. Dredge dates thoroughly in the flour mixture. Set aside.

4.In a mixing bowl, beat eggs and sugar on high until thick and  pale yellow. Lower speed and gradually pour melted butter. Fold in flour with dates mixture on low speed until blended. Pour into lined pan.

5. To make the topping, blend flour, cinnamon, baking soda and sugar. Add butter and mix with a wooden spoon. Fold in chopped walnuts. Scatter topping mixture over the batter's surface.

6. Bake for 50-55 minutes until golden and top is set.

7. Let cool completely before unmolding.

Botanical bliss and journaling joys



Of all the available printable 2012 calendars out there, artist Alice Cantrell's free herb/botanical calendar really caught my eye. I'm captivated by the fact that the field journal style calendar is a collaboration between her and her talented 14-year old daughter Anna. I adore the selection of herbs featured in the calendar and the useful tidbits of information regarding the herbs' healing and culinary uses.  The calendar also includes a moon phase schedule, essential to every gardener or botanical enthusiast. Better download and print the calendar as it is still February.

Alice has several free downloads in her blog ranging from a garden notebook to a picnic plan (how quaint!). Visit Alice's ETSY shop for more collectible, printable treasures.




I also recently received beautiful, mori girl style journal from a sweet friend. So grateful for this gorgeous thing of beauty. Journaling is a habit I want to develop this year. With a little help from Kikki.K's journaling prompts,diary writing is going to be a lot of fun.
