Recipe: Rosemary Orange Olive Oil Cake

Here's one of my favorite cake recipes--Rosemary Orange Olive Oil Cake from Hetty McKinnon's cookbook Family found via one of my favorite blogs A Cup of Jo. This is a lovely cake to make for the holidays, very straightforward with clean, pure flavors of olive, Rosemary and orange. Festive Mediterranean flavors all in one way to bake, aromatic treat!



ROSEMARY ORANGE OLIVE OIL CAKE


Ingredients:

  • 1 cup granulated sugar
  • zest of two oranges
  • 2 tbsps chopped rosemary leaves
  • 2 large eggs, beaten
  • 1 cup greek yogurt
  • 1cup extra virgin olive oil
  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • confectioner's sugar for dusting

Directions:


1. In a bowl, sift together all-purpose flour with baking powder and alt.
2. Combine orange zest, rosemary and sugar in a separate oil. Rub ingredients together until fragrant.  3. Add eggs and whisk until well combined. Add orange juice and yogurt and blend in the olive oil.
4. Add dry ingredients to wet mixture. Combine well and cut and fold into a floured, greased loud baking pan. Bake for 45-50 minutes until done.
5. Dust with confectioner's sugar and garnish with rosemary sprigs.
